CHILI CON QUESO

INGREDIENTS

  • 8 Oz. VELVEETA, Cut Into 1/2-Inch Cubes
  • 8 Oz. Cream Cheese, Cubed
  • 1/2 Cup Evaporated Milk
  • 1/4 Cup Chopped Roasted Red Peppers
  • 1 Scoop of your favorite Hot Mess Brands Salsa Seasoning

GARNISH IDEAS

  • Chopped Cilantro
  • 1 Jalapeno Pepper, seeded and diced

DIRECTIONS

  1. Mix all ingredients in medium saucepan.
  2. Cook over medium-low heat for 5 minutes or until thoroughly heated and well blended.
  3. Serve immediately. (Keep warm in a low crockpot)

VARIATIONS

  • Prepare it in a crock pot on low for 2 or 3 hours.
  • Prepare it in a microwave Place in a microwave safe bowl. Microwave on high for 1 minute. Stir. Repeat as necessary till creamy and hot throughout. Transfer to serving bowl or crock pot to serve.
  • Add a 15 oz. can of chili (no beans)
  • Add a ½ lb of cooked ground meat or chorizo.
  • Add a can of petite diced tomatoes (drained)

KITCHEN TIPS

Serving Suggestion: Serve with assorted cut-up vegetables or tortilla chips.

SIDELINE DIP

INGREDIENTS

  • 8 Oz. container Chive and Onion Cream Cheese, softened
  • 8 Oz. Sour Cream
  • 1 Scoop of your favorite Hot Mess Brands Salsa Seasoning

GARNISH IDEAS

  • Chopped Cilantro
  • Jalapeno Pepper, seeded and diced 
  • Diced roasted or fresh tomato

DIRECTIONS

  1. Mix all ingredients in bowl.

  2. Serve immediately or prepare in advance, then cover and refrigerate.

VARIATIONS

  • Substitute French Onion Dip for the Sour Cream.

  • Substitute Plain Greek Yogurt for the Sour Cream

  • Substitute Garden Vegetable Cream Cheese.

  • Substitute Neufchatel Cheese for Cream Cheese.

KITCHEN TIPS

Use an electric mixer for a creamier texture.

Serving Suggestion: Serve with assorted cut-up vegetables or tortilla chips, or use it as a condiment for your sandwiches and bagels.
